5 Recipe Ideas That Will Make Your Pancake Day

Although it doesn't have as much 'importance' as the other Easter holidays and it won't get you a day off work to celebrate, Pancake Day is always a fun time of the year. Shrove Tuesday originated as a way for Christians to use up their rich, fatty foods before Lent, but you don't have to be religious to participate. Millions of Brits take the opportunity to whip up a batch of hearty pancakes to celebrate the day. However, very few of us experiment with the food and instead cook the same tired pancake batter recipes year after year. If you're feeling a little bit more adventurous this Pancake Day, try out some of these delicious pancake themed alternatives.



Blintzes

Blintzes are an Eastern European tradition on Pancake Day, and they are a simple and delicious way to completely transform the humble pancake. Cook your pancakes as normal, and then create a filling by beating 250g mascarpone cheese, 3 tbsp of caster sugar, 1 egg yolk, 2tsp lemon juice and 1 tsp vanilla in a large mixing bowl. Fill each pancake with a large dollop of the mixture and wrap them into a small neat parcel. Fry the parcels in hot oil on the hob until they are golden brown, and top them with fruit, syrup or whipped cream before serving.

Chinese Pancakes

The trickiest part of Pancake Day is finding the right time to eat them. Pancakes aren't quite filling enough to be a main meal, but they're also a bit too hearty for a snack. Chinese pancakes are a great way to make a meal out of the occasion. Knead 450g plain flour and 310ml boiling water to create a firm dough and let it for rest for 30 minutes. Cut the flattened dough into small circles and brush each pancake with sesame oil before frying until brown spots begin to appear on the surface. Fill with hoisin duck and teriyaki chicken or vegetarian options like sliced cucumber, shitake mushrooms and spring onions.



Crepes

Traditional pancakes aren't everyone's cup of tea. If you find yourself pouring huge quantities of sugar or lemon on your pancake offerings in a bid to make them palatable, why not try a batch of crepes instead? Crepes are not quite the same as pancakes as the batter is much thinner and less bread-like. However, the cooking method and most of the ingredients are the same, so you can quickly whip up a batch with the same eggs, flour, milk, oil, sugar and salt you'd use for your pancakes. Indulge your sweet tooth and cover your crepes with syrups and fruits or, if you'd rather go for a savoury snack, stuff them with cheese, ham and sour cream.

Sweet Potato Pancakes

Mashed sweet potato may seem like an unconventional ingredient to add to pancake batter, but these delicious and fluffy pancakes are far from an acquired taste. Again, the method and ingredients are very similar to traditional pancakes. Add 300g mashed sweet potato to a mixture of 180g flour, 3tsp baking powder, 2 eggs and 60g of butter to create a stiff batter, and add a pinch of nutmeg and ginger to spice up the taste. Fry as normal and top with maple syrup for a filling treat.



American Style

American pancakes are much heartier thanks to their inclusion of buttermilk and rising agents in the recipe. The ingredients may seem like small differences, but the result is a thicker, doughier pancake with a moreish taste which can be eaten with many different toppings. Have a meaty, filling brunch with bacon and eggs or a sweet dessert with soft cooked apples, pecans and maple syrup.
